Apple Crumble

1½ lb cooking apples
1/3 cup water
¾ c brown sugar
2 t grated lemon rind
½ c butter
1¼ c flour
½ c sugar
¼ t ginger
½ t cinnamon

Peel, core, and slice the apples. Combine the water, sugar and lemon rind in a saucepan. Add the apple slices and cook, covered, until soft. Put into a well buttered pie tin. Combine butter, flour, sugar, ginger, and cinnaom. Mix until looks like fine bread crumbs. Sprinkle over the apples. Bake in a 350°F oven for about ½ hour or until golden brown. Serve warm.

Serves 4-6
