½ c butter
1 c sugar
½ c milk
1 egg
1 t vanilla
½ t salt
3½ c flour
3 t baking powder
2 c dates (8 oz) cut up
1 c water
¼ c sugar
1 t flour
1 t vinegar
1 t vanilla
Beat butter, 1 c sugar, milk, egg and 1 t vanilla. Stir in salt, 3½ c flour and baking powder. Place in covered bowl and refrigerate at least 4 hours. Meanwhile, mix dates, water ¼ c sugar, 1 t flour and vinegar. Boil and cook til thick. Add 1 t vanilla and cool.
Roll out dough and cut into 2½" circles. Place 1 circle on cookie sheet, add 1 T filling, and cover with another circle. Press edges with fork to seal and make a slit in top with knife. Bake 10-12 minutes at 375°
