Caramelized Onion Puffs

2 Tbs butter or margarine
¾ cup coarsely chopped onion
¼ cup finely chopped red bell pepper
2 eggs
½ cup sour cream
¼ tsp salt
1/8 tsp red pepper sauce
¾ cup finely shredded Cheddar cheese (3 oz)
1 package(8 oz)refrigerated crescent dinner rolls

Heat oven to 400°F. Spray 24 mini muffin cups with cooking spray. In 10-inch skillet, melt butter over medium-high heat. Add onion; cook 5 minutes, stirring occasionally. Reduce heat to medium; add bell pepper. Cook 5 to 7 minutes longer, stirring occasionally, until onion is softened and golden brown. Remove from heat.

In medium bowl, beat eggs. Stir in sour cream, salt and pepper sauce. Stir in cooked onion and ¼ cup of the cheese. Spoon onion mixture evenly into mini muffin cups.

Unroll dough into 1 large rectangle; press perforations and edges to seal. Using a 1½-inch biscuit or cookie cutter, cut dough into small rounds. Place dough round on top of onion mixture in each cup. Top with remaining cheese.

Bake 10 to 15 minutes or until golden brown and set in center. Cool 5 minutes; run knife around edge of each muffin cup. Serve warm or at room temperature.

Again I've no clue how these taste. But it looked good & she was all excited to make them. Remember to check your oven temps people.

Lemon Cream Pie

1 box refrigerated pie crusts, softened as directed on box
1 package (8 oz) cream cheese, softened
1 cup milk
1 box (4-serving size) lemon instant pudding and pie filling mix
½ cup lemon pie filling (from 15.75-oz can)
1 container (8 oz) frozen (thawed) whipped topping
Small, round multi-colored candies, if desired

Heat oven to 450°F. Make pie crust as directed on box for One-Crust Baked Shell using 9-inch glass pie plate. Bake 9 to 11 minutes or until lightly browned. Cool completely, about 15 minutes.

In medium bowl, cream cheese with electric mixer on medium speed about 30 seconds or until creamy. Gradually beat in milk until well blended. Add pudding mix; beat about 30 seconds or until smooth. On low speed, beat in pie filling just until blended. Fold 2¼ cups whipped topping into pudding mixture.

Spoon pudding mixture into cooled baked shell. Refrigerate pie at least 2 hours or until set. Pipe or spoon whipped topping on top of pie as desired. Sprinkle with candies. To serve, cut into wedges.

Italian Zucchini Crescent Pie

2 tablespoons butter
4 cups thinly sliced zucchini
1 cup chopped onions
2 tablespoons dried parsley flakes
½ teaspoon salt
½ teaspoon pepper
¼ teaspoon garlic powder
¼ teaspoon dried basil leaves
¼ teaspoon dried oregano leaves
2 eggs, well beaten
2 cups shredded mozzarella cheese (8 oz)
1 can (8 oz)refrigerated crescent dinner rolls
2 teaspoons yellow mustard

Heat oven to 375°F. In 12-inch skillet, melt butter over medium-high heat. Add zucchini and onions; cook 6 to 8 minutes, stirring occasionally, until tender. Stir in parsley flakes, salt, pepper, garlic powder, basil and oregano.

In large bowl, mix eggs and cheese. Add cooked vegetable mixture; stir gently to mix.

Separate dough into 8 triangles. Place in ungreased 10-inch glass pie plate, 12x8-inch (2-quart) glass baking dish or 11-inch quiche pan; press over bottom and up sides to form crust. Firmly press perforations to seal. Spread crust with mustard. Pour egg mixture evenly into crust-lined pie plate.

Bake 18 to 22 minutes or until knife inserted near center comes out clean. If necessary, cover edge of crust with strips of foil during last 10 minutes of baking to prevent excessive browning. Let stand 10 minutes before serving.

*High Altitude (3500-6500 ft): Bake 30 to 35 minutes, covering edge of crust with foil after first 15 minutes of baking.

This is definitely a different item to take for a pot luck dinner. It's not bad. Just different.

Streusel-Pecan Sweet Potatoes


Potatoes
cups half-and-half
1 1/3cups boiling water
¼cup butter, melted
1box (6.3 oz) Betty Crocker sweet potato mashed potatoes
½teaspoon grated orange peel
¼teaspoon salt
¼teaspoon ground cinnamon
¼teaspoon ground nutmeg
Topping
¼cup packed brown sugar
3tablespoons all-purpose flour
2tablespoons butter, softened
½cup pecan halves or chopped pecans


Heat oven to 350°F. In 1½-quart casserole, mix half-and-half, boiling water and melted butter. Add contents of 2 pouches potatoes with seasoning (from potatoes box) and remaining potatoes ingredients; stir well.
In small bowl, mix brown sugar and flour. With fork, cut in 2 tablespoons butter until crumbly. Stir in pecans; sprinkle over top.
Bake uncovered 30 minutes or until topping is golden.
