Welcome to the 2012-2013 school year.


 Today is the first day of school in many communities. May the teachers, school stuff staff, and students all have a great year ahead of them. May their first day of school be filled with excitement and their knowledge cups be filled to over flowing this year.

I'd like to request that those who are driving especially around area schools to remember this and play it safe. For those heading to work or appoints, please leave a bit earlier and if you can't then take the extra time this morning to slow down  in the school zones. Be on the look out for school crossing guards who will be doing their job by being in the intersections. Be alert for children crossing in places they really shouldn't and chasing after balls that might escape the playground during recess time. 

Lets have a great 1st day of School by being safe.

Chocolate Coconut Drops



2/3 cup Eagle Brand Sweetened condensed milk
1 (1 oz) square unsweetened chocolate
1/8 teaspoon salt
1 1/3 cups (3½ oz) flaked coconut
½ teaspoon vanilla extract

In top of double boiler, combine sweetened condensed milk, chocolate and salt. Cook over hot water; stir frequently until thickened. Remove from heat. Stir in coconut and vanilla extract. Drop by teaspoonfuls, about 1 inch apart, onto well-greased baking sheet. Bake in a moderate 350°F oven, 10-12 minutes or until set. Immediately remove from baking sheet. Cool.

Makes about 1¼ dozen 1½ inch diameter cookies
