Maple Oat Bread
1¾ cup High Protein GF flour Mix
1 tsp xanthan gum
½ tsp salt
¼ cup canola oil
3 Tbs brown sugar
1 tsp baking powder
½ tsp baking soda
1 egg
½ cup GF maple syrup
¼ tsp. GF maple flavoring
1 cup GF oats
1½ cups soy milk blended with 1 Tbs apple cider vingear
1/3 cup chopped pecans
1/3 cup chopped dried cranberries
Preheat oven to 350° Lightly spray a 9 x 5 loaf pan or a slightly smaller one with cooking oil. In a large bowl sift the flour, baking powder, soda, and salt. Whisk together until blended. In medium bowl whisk the egg with the oil until smooth. Whisk in the maple syrup, brown sugar, and vinegary soy milk. Stir in oats, pecans, and cranberries.
Add wet ingredients o dry and stir with a wooden spoon until just combined. Pour into pan, smooth top and bake until golden brown and tester comes out clean, about one hour. Cool in pan for 10 minutes before removing.
This was a wonderful treat made for us by a friend. She didn't reveal the source of the recipe just said I must send a shout out of Thanks to Sister Kathleen.

Educational Opportunities...
For Those Who Might Consider Home Schooling Or Who Might Want to Provide Something Educational for their Child(ren) to do....

You do have to join the program. Once a week you get an email from the Erskine Family listing the free items available for that week. You then click on the link in the email and go to today's date and get today's resource. The nice thing about the email is you can then pick which resources to get and which ones to avoid.
The items might be an ebook, a scanned book turned into a PDF, a video, an audio recording (mp3),
They may relate to a theme (gardening), event (election), seasonal (one of the 4 seasons or Christmas, Easter...)
I have found them to be an interesting addition to lessons, to have something to do for rainy day or sick quiet activity time, road trips, etc. I can't wait to do American History because of the great resource involving Paul Revere.

The people who created this program are AWESOME!!!! They have superb customer service. I started with their free version (basic or HST) and it made a huge difference in my ability to stay on track with our school year. I have since upgraded to the paid version (plus or HST+.
In the time I have used their program, I can say I have been nothing but impressed. Sure there's a bit of a learning curve but when isn't there with new software programs? How many software programs out there do you get to interact with the creators? How many do you get responses to your questions or problems or issues in as little as 5 minutes from the owner? This has been my experience on the few times that I have had a problem with the program. I send an email direct to the support center and have always gotten the response back extremely quick in under 5 minutes to the longest wait I've had of 15 minutes. There is also a forum that has an excellent response time for guidance on how to use the program.
Every year the program is updated for FREE. And when it's updated there are question and answer sessions to help those who use the program get familiar with the changes. If there are glitches they are fixed in a timely manner and updates for them are available ASAP. I've not seen this kind of support for any other home school lesson planning/tracking software program. Especially with the price of FREE!

Egg Drop Soup
4 cups chicken broth
3 Tbs water
1 Tbs cornstarch
1 egg beaten
10-12 fresh snow peas
1 green onion finely sliced
¼ cup finely chopped ham (optional)
Bring the chicken broth to a simmer in a 2½ to 3 quart saucepan over med-high heat. In a separate bowl combine the water and cornstarch, then stir in the cornstarch mixture into the simmering broth.
Bring the chicken broth to a boil, then remove it from the heat. Slowly pour in the egg and gently stir it with a fork in one direction only,stirring slowly for long strands of egg, more rapidly for thinner shreds. Add the snow peas, the green onion, and the ham, if desired. Let the it stand for a few minutes before serving
Serves 4

Luna Wolf Mystical Essence (LWME) is a work at home mom company. Vicki Green is the owner.

Our Mystical Soy Candles are hand poured upon receipt of order unless it's a special scent we've poured in advance.
Burn Times: 8oz. candle will burn approx. 75-80 hours and 16oz candle will burn approx. 150-160 hours.
LunaWolf's Mystical Essence now offers a recycling program, which is our way of given back a bit to the earth.
We accept used candle jars, containers that can be used for candles.
The jars can be from our company or from any other you wish to send in.
For every box received, you will receive a gift voucher for a purchase at LunaWolf's. The vouchers will be determined based on the quality of the jars/containers as well as the quantity, and will range from $10-$20.
No limit on the amount of vouchers you can receive.
Each voucher is good for 1 year from date of box received.
We'll even do the cleaning, no need to clean them out before sending.

Wonton Soup
Wonton Soup
1/4 lb ground pork, chicken or turkey
1/4 cup finely chopped water chestnuts
2 T soy sauce, divided
1 tsp minced fresh ginger
1 egg, white, slightly beaten
12 wonton wrappers
1 can (46 oz) chicken broth
1 1/2 cups sliced fresh spinach leaves
1 cup thinly sliced cooked pork (optional)
1/2 cup diagonally sliced green onions
1 T Oriental sesame oil
Shredded carrot for garnish
1.Combine ground pork, water chestnuts, 1 T soy sauce, ginger and egg white in small bowl, mix well.
2. Place 1 wonton wrapper with a point toward edge of counter. Mound 1 tsp of filling toward bottom point. Fold bottom point over filling, then roll wrapper over once. Moisten inside points with water. Bring side points together below the filling overlapping slightly; press together firmly to seal. Repeat with remaining wrappers and filling* Keep finished wontons covered with plastic wrap while filling remaining wrappers
3. Combine broth and remaining 1 T soy sauce in large saucepan. Bring to a boil over high heat. Reduce heat to medium; add wontons. simmer, uncovered 4 minutes.
4 Stir in spinach, cooked pork and onions; remove from heat. Stir in seasame oil Ladle into soup bowls Garnish with shredded carrot.
Makes 4 to 6 appetizer servings (about 7 cups)
*Wontons may be made ahead to this point; cover and refrigerate up to 8 hours or freeze up to 3 months. Proceed s directed in step 3 if using refregerated wontons increase simmer time to 6 minutes if using frozen wontons

Peanut or Vegetable Oil
6 cups shredded cabbage or preshredded coleslaw mix
1 cup chopped fresh mushrooms
2/3 cup thinly sliced green onions
1/2 lb ground beef, pork, or turkey
3 cloves garlic, minced
1/4 tsp crushed red pepper flakes
12 egg roll wrappers or 24 wonton wrappers
Sweet and Sour sauce for dipping
Chinese Hot Mustard for dipping
1. Blend soy sauce and sherry into cornstarch in cup until smooth.
2. Heat wok or large skillet over med-high heat. Add 1 T oil; heat until hot. Add cabbage, mushrooms and onions; stir-fry 2 minutes (cabbage will still be crisp) Remove, set aside.
3. Add beef, garlic, and crushed red pepper to wok; cook until beef is no longer pink, stirring to separate beef. Spoon off fat.
4. Stir soy sauce mixture and add to wok. Stir fry 2 minutes or until sauce boils and thickens. Return cabbage mixture; heat through, mixing well.*
5. Place each egg roll wrapper with one point toward edge of counter. Spoon filling across and just below center of wrapper; use heaping 1/3 cup filling for each egg roll wrapper or 2 tsp filling for each wonton wrapper
6. To form egg roll fold bottom point of wrapper up over filling. Fold side points over filling, forming an envelope shape. Moisten inside edges of top point with water and roll egg roll toward that point,pressing firmly to seal. Repeat with remaining wrapper and filling.
7. Pour 1/2 inch oil into large skillet. Heat oil to 375 degree F. Fry egg rolls, 2 or 3 at a time or mini egg rolls 6 to 8 at a time 2 minutes per side or until crisp and golden brown. Drain on paper towels. Serve with sweet and sour sauce and hot mustard.
Makes about 12 egg rolls or 24 mini egg rolls
*Egg roll filling may be made ahead to this point; cover and refrigerate up to 24 hours. When ready to use, heat mixture until hot. Proceed as directed in step 5
