Strawberry Recipes

In honor of tomorrows local Strawberry Festival, here is a cool treat.

Strawberry Snow (Mansikkalumi)
1 envelope (1 tbsp) unflavored gelatin
¼ cup water
2 cups crushed strawberries
4 egg whites
½ cup sugar
1 cup heavy cream, whipped

Soften gelatin in cold water. Heat 1 cup strawberries to boiling. Stir in Gelatin. Chill until syrupy. Beat egg whites until stiff and add sugar gradually. Fold egg whites into cooled strawberry gelatin. Fold remaining strawberries into gelatin; last, fold in whipped cream. Spoon into individual serving dishes. Can be served immediately or frozen. If frozen, remove from freezer 10 minutes before serving. Garnish with fresh strawberries.

Serves 6-8

Strawberries Mary

2 or 3 bananas
1 T lemon juice
1 pkg frozen strawberries, partially thawed
3 T strawberry jam
5 macaroons, almond or coconut
½ cup whipping cream
slivered toasted almonds

Slice the bananas into a serving bowl. Sprinkle with the lemon juice, then add the strawberries mixed with the jam. Next comes the macaroons, crumbled. Cover it all with the cream, whipped and slightly sweetened. Chill it an hour or so before you serve it with the almonds on top.

Strawberry Supreme

1st layer:
1 pkg. (3 oz) strawberry Jell-O
1 cup boiling water
1 pkg frozen strawberries

2nd layer:
1 pkg (3 oz) strawberry Jell-O
1 cup boiling water
1½ cup vanilla ice cream, softened

Dissolve 1 pkg strawberry Jell-O in the 1 cup of boiling water. Add 1 pkg of frozen strawberries and stir until berries are separated and gelatin is slightly thickened. Pour into 5 cup mold. Chill until set, but not firm. Meanwhile, dissolve other pkg of strawberry Jell-O in 1 cup boiling water; add 1½ cups of softened vanilla ice cream by spoonfuls. Stir until ice cream melts. Spoon over partially set first layer of Jell-O. Return to refrigerator and chill till firm. Approximately 4 hours. Makes 8 servings. Can put first layer in freezer to partially set up fast (10 min or so).
